Last night was cold and rainy, and while no one was sick, the bf and I could both use something cozy and nourishing. I already tried Cherchie's soup when I was testing it for the October flu box, but I had another package on hand, so I decided to go ahead and make it up.
Also, because I wasn't sick, it seemed like fun to add lots of extra veggies, beyond the recommended yellow onion and clove of garlic.
I found that about a quarter lb was a reasonable amount of carrots, celery, and/or peas (although adding all 3 certainly made the soup pretty chunky) I also had some fresh parsley lying around, so some of that went in, too.
One pro tip: purple carrots will dye your soup a darker shade. It tasted great, but I don't recommend them for aesthetics!
Also, the chicken breast says it should be cooked on the Cherchie's package, but I actually cubed it up into ~ 1/2-3/4" cubes, and threw them in for the last 10 minutes. They were cooked all the way through, but still nice and moist.
And here is the final product - It's a great soup cooked exactly as recommended on the package, but if you have extra veggies around (and the health/stamina to chop them up) I recommend throwing them in.
